Notes from Chef Shen:

We often forget about the palette of flavours that we get to play with in South East Asian cooking. The tapestry of spices, herbs and sugars is rich and bountiful and I wanted to showcase these amazing flavours with a new dinner theme of Sugar and Spice and Everything Nice. 


Sugar - we have the molten Gula Melaka from Malaysia, the golden hued palm sugar from Thailand, Gula Jawa from Indonesia, just to name a few.


Spices like clove, cassia and pepper also play an important part in our culinary heritage. We will also showcase the delicious herbs that we grow in the Sekret Garden, which is the 'everything nice' part of the menu.

Palm Sugar

Ownselfmake 5-spice cured pork belly, sliced thinly ceviche-style 


Nutmeg, Cinnamon, Cloves

Souper buntut wagyu, garlic chives foccacia with ulam pesto


Garam Masala

Rendang beef short rib, kampung honey, kalamansi lime marmalade salad

Gula Melaka

Sou-vide pork collar with kong bah glaze and achar


Ownselfmake 5-spice fried chicken, slaw, sng ngee

Sugar, Salt, Pepper

Fried prawns with nasi lemak with Ownselfmake sambal belachan


Fried golden pomfret with turmeric leaf, sng ngee, pickled green papaya


Brown butter cake with torch ginger syrup, pistachio ice-cream
